1. INTRODUCTION
The Acoustic Extra Freezing (AEF) Freezer AEF 12/1-EU (hereinafter - AEF FREEZER) is designed for high quality freezing of raw and processed food.
Food frozen in AEF FREEZER can be stored and transported in a conventional cold chain at the temperature equal or below -20°С.
The main difference between AEF freezing technology and conventional methods of freezing is the preservation of food cells during the freezing process through the use of AEF channels (‘Individual Freezing Algorithms’) for different types of food.
AEF significantly reduces weight loss of a frozen product which occurs from the evaporation of a liquid (drying of the product), typical for standard methods of freezing when needle-like ice crystals damage cell membranes.
AEF frozen food preserves taste and nutritional value because lipids do not oxidize, proteins do not dehydrate. As a result, shelf life of AEF frozen food doubles, without a loss of quality.
WARNING!
Personnel responsible for installation, operations, transportation, and maintenance of AEF FREEZER shall read the User Manual carefully. The Manual shall be in easy access for operators and maintenance staff.
The Manufacturer / Seller will not be liable for any breakage, accidents or faults due to non-compliance with the instructions of this Manual.
The Manufacturer / Seller will not be responsible if a user makes any modifications or if non-authorized accessories are installed in the unit. The Maintenance operations to be carried out exclusively by an authorized service organization.
AEF FREEZER operates at ambient temperature from +3°С to +30°С and relative humidity from 40% to 70%.
2. DESCRIPRION
Between the outer and inner the walls of the freezer there are transducers (‘Acousters’) of AEF module and a layer of high-density polyurethane foam for insulation.
Inside the freezer there is an air cooler with two fans that provide equal distribution of air flows and a rack for 12 trays GN 1/1 or 600х400 mm.
WARNING!
Do not place magnetic / metal objects inside the frame. Use only non-magnetic packaging for food and trays made of non-magnetic steel (e.g. AISI 304), plastic or aluminum.
It is strictly prohibited: unauthorized opening of the AEF module, measuring its physical parameters, reverse engineering.
The AEF Module loses its working capacity after opening and can be restored to working condition by a Manufacturer’s employee. In case of unauthorized opening of a freezer's AEF module, warranty voids and the buyer shall pay EUR 5000 fee. In addition, the buyer shall cover travel and accommodation expenses of Manufacturer’s employee for a visit.
The Cooling Unit is a closed pressure system that comprises of compressor, evaporator, sensors and temperature-control valve.
For constant temperature measurement in the chamber, a temperature-sensitive sensor is mounted on the grill of an air cooler fan. When a selected temperature level is reached in the chamber, a controller turns off a compressor, and when the temperature rises above the set temperature, the controller turns the compressor on.
The operation of the acoustic freezing system is controlled by AEF Module (‘Ice Processor’) with special software that generates signals to create fields of the desired configuration and power for each type of product.
The operation of the Cooling Unit is controlled by a controller designed to maintain the desired temperature in the usable space of AEF Freezer.
The parameters of a product, package and temperature shall be chosen on an LCD screen (Fig. 1)

6. RECOMMENDATIONS ON AEF FREEZING
Time to freeze a product to -18°С in its center, depends on initial temperature of the product, thickness, product type, shape, and package.
For most products, 0°… +5°С is the optimal temperature range for starting the AEF freezing process. If there is +30°С inside a product, and -35°С inside AEF FREEZER, the 65°С difference between the product’s surface and core will cause internal tension and deformation.
For a quick-freezing process, products shall be vacuum packed or placed on trays without any package. In that case, the average speed of freezing will be twenty millimeters per one our.
It is not recommended to freeze food packed in blocks, in thick cardboard or modified atmosphere packed products. For such kinds of package time of freezing increases 2 – 2.5 times.
Actual freezing time for a particular product in a certain package shall be checked experimentally.
After finishing freezing process, AEF FREEZER automatically switches to -24°С storage mode for two weeks. The tiny ice crystals inside frozen product have been already shaped and the product can be moved for storage to a conventional freezing chamber with temperature -18°С and lower.
To avoid fluctuations of temperature due to opening doors of chamber, it is recommended to store products under -24°С and lower.
WARNING!
Do not place magnetic / metal objects inside the frame. Use only non-magnetic packaging for food and trays made of non-magnetic steel (e.g. AISI 304), plastic or aluminum.
